Potato Leek Soup
4 or 5 medium leeks 1 medium onion
2 lbs. white potatoes (cut-up & soak in cold water)
8 cups chicken broth
1 package Knorr Leek soup mix
2 sticks butter
1 cup half and half or milk
Clean very well and cut up leeks, use all of the white part and about 2 inches of green on each leek. Chop onion. Melt butter on low and add leeks and onion. Cook until transparent. Add broth and potatoes, cook until tender. Add soup mix. Add half and half or milk. Put soup through blender and adjust with salt and paper to taste.
