1 pastry for double-crust pie
8-9 medium granny-smith organic apples
2 tbsp. organic lemon juice
1 stick of organic unsalted butter
1/3 tsp. organic ground nutmeg
11⁄4 tsp. organic ground cinnamon
1⁄2 c. organic pure cane sugar
1⁄2 c. organic brown sugar
1 dash salt
1⁄2 tbsp. organic granulated sugar
Preheat oven to 425° F (220° C). Heat 1 stick of organic unsalted butter in microwave for 30 seconds, or until melted. Pour water into saucepan and add a dash of salt. Combine melted butter with organic pure cane sugar, organic ground cinnamon, and organic ground nutmeg in a saucepan. Bring to a boil, then turn off the heat and move the saucepan off the burner. Allow the combined ingredients cool momentarily.
While that is cooling, using a clean surface, roll out half of the pastry crust until it is smooth. Place the smoothed out crust into your 9-inch pie tin. Slice apples and place them on top of the crust inside the pie tin. Roll out the remaining half of crust until it is smooth. Cut it into 8 separate 1-inch wide strips. One strip at a time, weave the strips on top of each other to create a crisscross/woven pattern. Fold the remaining edges of pastry strips under the bottom of the crust in order to finish your design and to “close” the woven pattern.
Pour the combined ingredients from saucepan on top of your apple slices and crust into the pin tin. Make sure that all of the crust has been coated with your liquid mixture. Next, sprinkle organic granulated sugar on top of your beautifully woven apple pie.
Bake it in oven for 15 minutes at 425° F (220° C). Reduce heat to 350° F (175° C) and bake for an additional 30 minutes, or until the crust is golden brown and apple-sugar filling is boiling. Remove from oven, allow your apple pie to cool, slice, and serve. If desired, serve pie slices along with a side of plain organic vanilla or organic vanilla bean ice cream. Enjoy!
