11⁄4 c. organic oats

1 c. organic unsweetened coconut flakes

3 sticks organic unsalted butter

2 large organic brown eggs

2 c. all-purpose organic baking mix

1⁄2 tsp. organic fine sea salt

21⁄2 c. organic pure cane sugar

1⁄2 tsp. organic baking powder

3⁄4 tsp. organic baking soda

11⁄4 tbsp. organic vanilla extract

Baking Instructions:
Preheat oven to 350° F (175° C). Heat 3 sticks of butter until softened. In a large mixing bowl combine unsalted butter, pure cane sugar, brown sugar, and eggs. Stir together until mixed well and then add the vanilla. While stirring, pour in the oats, next the baking soda, then the baking powder, and lastly the salt. Continue to mix until the dough begins to form. Once the dough begins to form, add in coconut and stir until mixture appears to have an even distribution of oats and coconut. Use a small kitchen spoon to scoop out the dough and roll it into balls. Place the rounded dough onto a greased baking sheet approximately 2-3 inches apart as they will flatten slightly. Bake for 7-9 minutes, or until edges appear dull. Allow cookies to cool on a cooling rack and serve. You might also want to enjoy your oatmeal goodies with a cold glass of organic low fat milk as you eat them!
